Mac 'n' Peas

Ingredients
  

  • 2 tbsp olive oil
  • 1 small onion minced
  • 8 oz GF ditalini noodles
  • 8 oz frozen peas
  • 1/2 tsp salt
  • 1 tsp red pepper flakes
  • 4 c hot water
  • 1 block vegan parmesan grated

Instructions
 

  • Heat olive oil in a pan that can fit everything
  • Add onion and fry until translucent
  • Mix in the peas and fry some more
  • salt and pepper to taste
  • add water to the pan
  • cook for a bit and then remove half of the peas from the pan and blend with an immersion blender
  • add pasta to pan and cook for a bit
  • add blended peas back to pan and simmer for 10-15 minutes
  • Cook until it thickens, add a little water if necessary
  • Turn off the heat and add most of the cheese and stir it in.
  • Serve immediately and top with the remaining cheese.
